Mojito Slushy

It’s was a lovely weekend in Southern California.  The weather rebounded from the rain we had in the beginning of the week and was warm and breezy.  It was really nice to sit on the patio and enjoy a cold Mojito Slushy made with limes and mint from my garden.  I got a little carried away with the photos but everything as so green and pretty.

 

Serves: 4

 

8 sprigs of mint, leaves only

1/4 cup agave nectar

1/4 cup lime juice

zest from one lime

4 cups of ice

1 cup rum

2 cups club soda

 

In a blender add the mint leaves, lime zest, lime juice, agave nectar, rum and 2 cups of the ice. Blend well until it’s all slushy then add the club soda.  Stir.

Evenly distribute the remaining ice to each cup.

Serve.
