Swiss chard is really good for you. I’ve looking for ways to incorporate it into my diet in every possible way. It’s a great substitute for spinach. This recipe is a great side for the Roasted Pork Loin with Prosciutto and Apples I made last week.
Swiss Chard and Mushrooms with Bacon and Herbs
1 cup mushrooms, chopped
1/2 cup applewood smoked bacon, chopped
2 bunches swiss chard, chopped
2 teaspoons kosher salt plus more
2 tablespoons unsalted butter
1 cup minced onion
1 tablespoon finely minced garlic
1 1/2 teaspoons dried thyme
1 1/2 teaspoons dried rosemary
1/2 teaspoon freshly ground black pepper
Melt butter in a large skillet over medium heat. Add garlic and onion; cook, stirring often, until soft and lightly golden, about 8 minutes. Add mushrooms and bacon; cook, stirring occasionally, until flavors meld, about 5 minutes. Stir in thyme, and rosemary; cook for 1 minute. Stir in 2 teaspoons salt and 1/2 teaspoon pepper. Remove from stove top and serve.
