Pineapple Mint Beer Cocktail

Pineapple Orange Guinness
2 parts Romy’s Pineapple Syrup (recipe below)
1 part orange juice
2 parts Guiness
lemon wedge, to garnish
Splash of sparkling water
Add the syrup, orange juice and Guinness to a glass.
Squeeze in the juice from a lemon wedge.
Serve over ice.
Romy’s Pineapple Mint Syrup
2 cups Pineapple juice
1 bunch fresh mint leaves
1/2 cup brown sugar
Add pineapple juice, sugar and mint to a saucepan. Over high heat, bring to a boil. Turn the heat down to medium.
Simmer for 30 minutes.
Remove from heat.
Cool.
My friend, Romy, and I were sitting around discussing food and drinks. She somehow came up with the idea for the Pineapple Mint Syrup. It’s tropical and refreshing. I’ve thought up a few drinks with this syrup. I’ll be posting another one soon. This drink is weird, in a good way. It’s a beer drink for someone that is not a beer drinker.
