Thai Tacos

Thai Tacos
Serving: 6
1 Tablespoon minced garlic
2 teaspoons minced fresh ginger
2 Tablespoons olive oil,
1 pound ground pork
1 cup finely shredded green cabbage
1 cup shredded carrots
6 scallions, finely chopped
1/2 cup mint
1/2 cup thai basil
1/2 cilantro
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon rice vinegar
2 teaspoons garlic chili sauce (or siracha)
12 small tortillas
Sweet chili sauce, to serve
Lime, to serve
Combine the fish sauce, soy sauce and vinegar to a small bowl. Set aside.
Saute the garlic and ginger in the olive oil in large pan over medium-low heat.
Add the ground pork to the pan, breaking it apart into small pieces, and saute until fully cooked.
Remove the pan from the heat and drain out any liquid. Remove from the heat. Let cool about 5 minutes.
Toss the pork with the cabbage, carrots, green onion, mint and basil. Then toss with the dressing.
To assemble the tacos, place the pork mixture into each taco.
Serve with sweet chili sauce and a squeeze of lime.
