Grilled Artichokes with Roasted Jalapeno and Cilantro Aioli aka The Best Artichokes EVER!

Seriously, the best artichokes I’ve ever had.  I ate all four.  I just couldn’t stop myself.  I love the smoky flavor that grilling adds to the artichokes.  This is a must try recipe!

Grilled Artichokes with Roasted Jalapeno and Cilantro Aioli aka The Best Artichokes EVER!
 
Grilling artichokes as a smokey flavor that is too die for. The cilantro aioli just puts this recipe over the top!

Serves: 4 as a side or appetizer
Ingredients
  • salt
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ½ cup mayonnaise
  • ½ roasted jalapeno, seeds removed (you can add more or less depending upon your preference, just taste as you go)
  • 1 bunch cilantro (about 1 cup)
  • 4 fresh artichokes, stems removed
  • Extra Virgin Olive Oil
Instructions
  1. Add the lemon juice, zest, mayo, cilantro and jalapeno to a blender. Blend until smooth. Add salt to taste. Set aside in the refrigerator until ready to serve.
  2. Boil a large pot of salted water. Add the artichokes. Cook for about 10 minutes.
  3. Cut in half. Remove the ‘hair’ and toss with olive oil. See image below for explanation.
  4. Next, place artichokes on a hot grill for about 10 minutes.
  5. Remove artichokes from grill. Serve with aioli.
