Veggie Tacos


Makes 8-10 tacos


2 tablespoons olive oil

1 onion, diced (about 2 cups)

3 small zucchini, diced (into bite size pieces)

2 medium bell peppers (any color), diced (into bite size pieces)

1 tablespoon cumin

1 tablespoon smoked paprika

1 teaspoon red chili pepper (or more if you like it spicy)

salt and pepper to taste


1 avocado, diced

tomatillo salsa, optional

cilantro, optional


Saute onions in olive oil over medium high heat in a large sauté pan.   Cook until translucent.

Add zucchini and peppers.  Then add the spices and cook for 5 minutes, stirring frequently.  Cook until just soft.  You don’t want to cook out all the flavor.

Add the vegetable mixture into the warm tortillas.

Serve with avocado, cilantro and tomatillo salsa.


Zucchini is almost always plentiful at the farmer’s market which means that they are cheap.  It’s great to have a filling, flavorful and affordable meal.  The spices add a ton of flavor and you almost forget that this meal is totally vegan!
