Apple and Date Baked Oatmeal
1 cup plain yogurt
3 tablespoons cornstarch
1/2 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 cups soy milk
1/2 cup dried dates, chopped
2 cups apples, chopped
3 cups old-fashioned rolled oats
non stick spray
Preheat the oven to 375 degrees.
In a large bowl, whisk together the yogurt, cornstarch, brown sugar, vanilla, cinnamon, and salt. Once the mixture is whisked smooth, add the milk and whisk until smooth again.
Add the dates, apples and rolled oats to the milk mixture. Stir until well combined.
Pour the oat mixture into a 8×8 or 9×9 inch casserole dish coated with non-stick spray.
Bake in the preheated oven for 45 minutes, or until the center is no longer wet.
