I picked up some very juicy nectarines at the farmers market. There were too many to eat so I through one into this yummy cocktail. The whisky goes really well with the ginger beer while the nectarine gives a bit of sweetness.
1/2 medium nectarine (or 1 small)
2 ounces whiskey, chilled
1 tablespoon agave nectar
1 teaspoon homemade vanilla
1/2 ginger beer, chilled
Combine all ingredients excluding the ginger beer into a blender or food processer. Blend until the nectarine is a puree.
Pour the puree mixture into a glass. You should have about 1/2 cup.
Pour the ginger beer into the glass.
