I know pumpkin puree can be found in grocery stores year round but it just feels right during the fall and winter months. I try and include it in as many recipes as possible as you can see here, here and here. I’m really in love with this drink. It was creamy and dangerously smooth. It was more like a dessert than a cocktail. If you wanted to lighten it up you could easily use coconut or soymilk. It would have to be full fat soymilk otherwise it would be a little watery.
2 1/5 ounces Spiced Rum
1 ounce Honey
4 ounces Half & Half
2 ounces Pumpkin Puree
Nutmeg and Sugar, to rim glass and garnish (optional)
Combine all ingredients in a cocktail shaker (or a mason jar) and shake with ice.
Strain the drink into a chilled martini glass that has been rimmed with sugar and nutmeg.
Garnish with a dash of nutmeg.
