There isn’t anything sweeter or simpler than marinating pork in an apricot pepper fruit spread and a few other ingredients (less than 10 ingredients). It’s slightly sweet and slightly spicy. Neither the apricot nor the pepper are overpowering and I appreciate the subtleness. I roasted asparagus with the pork and served it with plain white rice for a satisfying mid-week meal.

Ingredients
  • 1 Pork Tenderloin (about 1 pound)
  • 1 tablespoon Extra Virgin Olive Oil
  • ¼ cup Soy Sauce (low sodium)
  • ½ cup Apricot Pepper Fruit Spread
  • ½ Onion, Finely Chopped
  • 2 teaspoons Chili Garlic Sauce
  • ¼ teaspoon ground Black Pepper
  • 1 cup White Wine or Chicken Broth
Instructions
  1. Preheat oven to 350 F degrees.
  2. In a large resealable plastic bag, combine the pork, olive oil, soy sauce, apricot pepper fruit spread, onion, chili garlic sauce and black pepper.
  3. Let the pork marinade for about 24 hours.
  4. In a large skillet under a high heat, add the pork loin, without marinade, and cook for about 3-5 minutes or until it gets a nice brownish color.
  5. Add the chicken broth to the pan and then place it in the oven.
  6. Roast the pork for about 25 minutes.
  7. Remove from the oven and let rest for another 5 minutes before cutting and serving.
