This Skillet Chicken and Fennel with Rice and Arugula dish is super flavorful as it’s packed with spices, fennel and arugula. It’s so good and surprisingly easy to make which is just what I’m looking for in a recipe.

As we prepare for baby, I’m looking for very simple dishes that don’t skimp on flavor. I want to stockpile recipes like this that are one-pot and can be made in under an hour (or even 30 minutes). I also don’t want to rely on fast or processed foods when I’m delirious from lack of sleep and can’t quite get it together to cook. So next time I make this, I’m going to try and freeze the leftovers. I’m a little concerned about the arugula and spices standing up to freezing. However, it would be great to have individually packaged meals like this ready-to-go when I’m too tired to cook. I’ll let you know if freezing is a possibility . . .

Ingredients
  • 1 tablespoon Extra Virgin Olive Oil
  • 4 Skinless and Boneless Chicken Thighs
  • Pinch of Salt and Pepper (optional for AIP)
  • 2 Garlic Cloves, minced
  • 1 head of Fennel, sliced with fronds reserved for garnish
  • 1 teaspoon Turmeric
  • ½ teaspoon Cumin (AIP reintroduction)
  • ¼ teaspoon Cinnamon
  • 1½ cups White Rice
  • 3 ounces Arugula
  • 2½ cups Chicken Broth
Instructions
  1. Pat the chicken thighs dry with a paper towel, then season both sides with salt and pepper.
  2. Heat a large deep skillet over medium heat.
  3. Add the oil and then coat the pan.
  4. Place the chicken thighs in the skillet and allow to brown before flipping about 3-5 minutes.
  5. Flip the thighs and let brown on the second side, another 3-5 minutes.
  6. Remove the browned thighs and place them on a clean plate.
  7. Leave the excess oil in the pan and add the fennel.
  8. Let the fennel cook for about 3-5 minutes until they are soft.
  9. Next add the garlic, turmeric, cumin, and cinnamon to the skillet and then sauté for about 30 seconds.
  10. Next pour the chicken broth into the skillet and using a spoon scrap any browned bits off the bottom of the skillet.
  11. Once the browned bits are dissolved, add the rice and give it a quick stir to distribute the broth and spices.
  12. Place the browned chicken thighs into the rice.
  13. Place a lid on the skillet and continue cooking at medium-high heat.
  14. Allow the rice mixture to come to a boil.
  15. Once it reaches a boil, turn the heat down to low and let the skillet simmer for 25 minutes.
  16. After 25 minutes, turn the heat off and remove the chicken.
  17. Fold in the arugula into the rice and then add the chicken back into the pan.
  18. Put the cover back on and let it sit undisturbed for an additional 10 minutes.
  19. Finally, remove the lid and fluff the rice with a fork.
  20. Top with the fennel fronds, if desired.

    I tried this with quinoa and sliced chicken breasts. Added a dash of cayenne pepper. Cooked this in a Double Grill Pan and I must say, I enjoyed it. I’m not a big fan of my own cooking Coz I don’t think I’m a good cook… But this was nice. 🙂 thank you!
