When you have a toddler running around your feet, a 30-minute meal can feel like an eternity. Before I had Tyler, I thought taking 30 minutes to make a meal was nothing. It all seemed so easy. Turmeric is tasty but you really need to take care of any splashes you find on clothing or countertops. It will leave a really lovely neon yellow stain on just about anything it touches. If you have quartz counters, I’ve found that Windex or baking soda with vinegar will usually remove those stains. Turmeric sounds dangerous but it’s totally worth it. Ingredients
  • 4 fillets Tilapia (about 1⅕ pounds)
  • 12 Baby Bok Choy, ends trimmed
  • 2 pints White Mushrooms, sliced
  • ½ cup Extra Virgin Olive Oil
  • ½ teaspoon Salt
  • ½ teaspoon Ground Black Pepper
  • ½ teaspoon Turmeric
  • ½ teaspoon Ground Coriander
  • 4 Green Onions, sliced
Instructions
  1. Preheat oven to 500 degrees.
  2. Arrange fish at one end of a large baking sheet.
  3. Add the bok choy next to fish and mushrooms at the opposite end.
  4. In a small bowl, combine the olive oil, salt, pepper, turmeric and coriander.
  5. Stir to combine then pour over the fish and vegetables.
  6. Sprinkle equal amounts of onion over each fillet of fish.
  7. Place in the oven and bake until just opaque in center, about 12 minutes.
  8. Once the fish is cooked, remove the pan from the oven.
  9. Gently toss the mushrooms and then the bok choy before serving.

Ingredients
  • 1 pound boneless, skinless Chicken Thighs
  • 1 tablespoon Cornstarch (Arrowroot Flour for aip/paleo)
  • Salt
  • Ground Black Pepper
  • 2 tablespoon Extra Virgin Olive Oil
  • 1 cup Marsala Wine
  • 1 pound White Mushrooms, sliced
  • ½ teaspoon Italian Seasonings
  • ½ cup Chicken Broth
  • 2 tablespoons Parsley, chopped (as a garnish)
Instructions
  1. Season the chicken with salt and pepper.
  2. Heat the olive oil in a large skillet over a medium high heat.
  3. Cook chicken in the skillet for about 2-3 minutes on each side.
  4. Once the chicken is cooked remove it from the pan and keep covered with foil.
  5. Turn off the heat and then add the wine to the pan to deglaze.
  6. Turn the heat back on to high and the stir the wine and scrap the chicken bits from the bottom of the pan.
  7. Let the wine cook for 2-3 minutes until the alcohol smell has reduced.
  8. Turn the heat down to medium high and then add the mushrooms to the pan and cook for about 5 minutes or until cooked through and the liquid has started to reduce.
  9. While the mushrooms are cooking, add the cornstarch or arrowroot to the broth. Take care to mix thoroughly as you don’t want any lumps in the sauce.
  10. Once the mushrooms have finished cooking, add the chicken broth and the Italian seasonings to the pan.
  11. Stir to combine and then add the chicken back into the pan.
  12. Reduce the heat to low and cover then let simmer for another 2-3 minutes or until the chicken is cooked through.
  13. Remove from the heat and sprinkle with parsley.
  14. Serve immediately.
