Ingredients
  • 2 medium Onions, roughly chopped
  • 4 Garlic Cloves
  • ¼ cup Extra Virgin Olive Oil
  • ¼ teaspoon Ground Turmeric
  • ¼ teaspoon Ground Cloves
  • 2 cups Chicken Broth, divided
  • 16 ounces Frozen Chopped Spinach, chopped
  • Salt, to taste
Instructions
  1. Puree the onion and garlic in a food processor.
  2. Add the onion mixture to a large pot on the stovetop over medium heat.
  3. Cover the pot with the lid, for about 5 minutes while stirring occasionally.
  4. Add olive oil, turmeric, cloves and 1 cup of broth to the pot and then stir to combine.
  5. Continue to cook, uncovered while stirring occasionally, for about 12-14 minutes or until onions are golden brown and the liquid has reduced. Be careful to watch it towards the end as you don’t want it to burn.
  6. Add the frozen spinach to the pot and stir to combine.
  7. Cook for another 25 minutes, adding the remaining broth as necessary, to keep the mixture creamy. Keep the spinach just covered with broth, and then let the liquid cook off for the last 10 minutes.
  8. Add salt to taste.

Ingredients
  • 1 pound boneless, skinless Chicken Thighs
  • 1 tablespoon Cornstarch (Arrowroot Flour for aip/paleo)
  • Salt
  • Ground Black Pepper
  • 2 tablespoon Extra Virgin Olive Oil
  • 1 cup Marsala Wine
  • 1 pound White Mushrooms, sliced
  • ½ teaspoon Italian Seasonings
  • ½ cup Chicken Broth
  • 2 tablespoons Parsley, chopped (as a garnish)
Instructions
  1. Season the chicken with salt and pepper.
  2. Heat the olive oil in a large skillet over a medium high heat.
  3. Cook chicken in the skillet for about 2-3 minutes on each side.
  4. Once the chicken is cooked remove it from the pan and keep covered with foil.
  5. Turn off the heat and then add the wine to the pan to deglaze.
  6. Turn the heat back on to high and the stir the wine and scrap the chicken bits from the bottom of the pan.
  7. Let the wine cook for 2-3 minutes until the alcohol smell has reduced.
  8. Turn the heat down to medium high and then add the mushrooms to the pan and cook for about 5 minutes or until cooked through and the liquid has started to reduce.
  9. While the mushrooms are cooking, add the cornstarch or arrowroot to the broth. Take care to mix thoroughly as you don’t want any lumps in the sauce.
  10. Once the mushrooms have finished cooking, add the chicken broth and the Italian seasonings to the pan.
  11. Stir to combine and then add the chicken back into the pan.
  12. Reduce the heat to low and cover then let simmer for another 2-3 minutes or until the chicken is cooked through.
  13. Remove from the heat and sprinkle with parsley.
  14. Serve immediately.
