Since having a baby, I get super excited for delicious meals that require very little clean up and aren’t fussy. This Sheet Pan Steak Dinner is so delicious and requires shockingly few ingredients. It’s only 6 ingredients to make an entire meal and requires only one pan to do all the cooking. Super duper excited about this recipe!

You could bring down the prep time by buying pre sliced mushrooms. If you can find peeled and chopped sweet potatoes then you would eliminate your prep altogether and this would be a 30 minute meal!

Ingredients
  • 4-5 Sweet Potatoes, peeled and chopped
  • Salt
  • Ground Pepper (optional for AIP)
  • Extra Virgin Olive Oil
  • 2 pints White Mushrooms, sliced
  • Italian Seasonings
  • 2 pounds Flank Steak
Instructions
  1. Preheat oven to 450 degrees.
  2. Toss potatoes with 1 teaspoon Italian seasonings, ½ teaspoon salt and 1 tablespoon olive oil.
  3. Pour on the sweet potatoes on a sheet pan.
  4. Place in the oven for 20 minutes.
  5. White the potatoes are cooking; toss the mushrooms, in the same bowl that held the sweet potatoes, with ¼ teaspoon salt and ½ teaspoon Italian seasonings.
  6. Liberally season both sides of the steak with salt and pepper (if using), 1 teaspoon Italian Seasonings as well as a few tablespoons of olive oil.
  7. Remove the pan from the oven and then move the sweet potatoes to ⅓ of the baking sheet to make room for the mushrooms and steak.
  8. Add the mushrooms and steak to the pan.
  9. Place the pan back in the oven and cook for an additional 15 minutes.
  10. Broil for 2-4 minutes to slightly brown the top of the steak.
  11. Remove the pan from the oven.
  12. Let the meat rest for 10 minutes.
  13. While the meat is resting, toss the mushrooms and potatoes.
  14. Slice the meat and then serve.

These Turkey and Mushroom Lettuce Wraps are a healthy easy one pot dinner dish. This recipe is allergy friendly (gluten, dairy, nut, egg, soy and shellfish free) and suits the autoimmune protocol (AIP) and paleo diets.

The autoimmune protocol diet (or paleo diet) can feel quite restrictive so I’m looking for different recipes that are still easy but taste great and will appeal to my whole family. This Turkey and Mushroom Lettuce Wrap recipe is a one-pot meal that is really healthy. I really don’t feel like I’m missing out when I’m eating this dish. It’s satisfying for not just myself but the rest of my non-AIP family.

I used marsala wine and ground black pepper in the recipe which are not strict AIP. If wine doesn’t agree with you then just omit it and double the fish sauce. It won’t have exactly the same flavor but it will still taste great.

I intended on only taking a week or two off while I was on vacation this month. However, it turned into an entire month off. After we returned from vacation, my son and I ended up with a flu bug and then my camera broke. Actually it didn’t break on it’s own, my son helped. Tyler is super curious and tall. I didn’t realize that he was suddenly tall enough to reach the kitchen counter. He grabbed the camera strap, pulled and the entire camera came crashing down on the floor. Luckily it missed Tyler but the camera was a goner. I’m finally back on track with my new camera.

Ingredients
  • 1½ - 2 pounds Ground Turkey
  • Extra Virgin Olive Oil
  • 3 Garlic cloves, minced
  • 4 Green Onions, thinly sliced
  • 1 pound Button Mushrooms, chopped
  • 1 (8 oz) can Sliced Water Chestnuts, drained and coarsely chopped
  • 1 tablespoon White Vinegar
  • 1 tablespoon Marsala Wine (optional for AIP)
  • 1 tablespoon Fish Sauce (2 tablespoons if omitting wine)
  • ½ teaspoon Ground Black Pepper (optional for AIP)
  • 1 bunch Cilantro leaves, chopped
  • 12 Butter Lettuce leaves (1 to 2 heads of lettuce)
Instructions
  1. Heat a tablespoon of olive oil in a large sauté pan over medium high heat.
  2. Add the turkey and cook until just browned, about 3-5 minutes, making sure to crumble the turkey as it cooks.
  3. Remove the turkey from the pan, add another tablespoon of olive oil and then add the onions and garlic to the pan.
  4. Cook until translucent, about 30 seconds to a minute.
  5. Next add the mushrooms, wine, rice vinegar and fish sauce.
  6. Cook for another 3-5 minutes, stirring occasionally.
  7. Last, add the water chestnuts and the ground meat back into the pan, and then let cook for a few minutes until the liquid has reduced.
  8. Stir in cilantro then season with salt and pepper, to taste.
  9. To serve, spoon several tablespoons of the beef mixture into the center of a lettuce leaf, taco-style.
