Happy Memorial Day!
Tequila Lime Shrimp
1 pound large shrimp, peeled and deveined
3 tablespoons olive oil
2 jalapeno, very finely chopped
2 cloves garlic, minced
zest of 2 limes
Juice of 2 limes
salt and pepper
Add the shrimp, olive oil, chopped jalapeno, minced garlic, lime zest and tequila to a medium bowl. Season with salt and pepper then toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes, or up to 1 hour.
Grill the shrimp for about 2 minutes per side, or until opaque. Remove the shrimp to a platter and pour the lime juice over them, toss.
Very flavorful! Very simple! This marinade would work great on a beef or chicken. I would just double the recipe. Shrimp are more delicate and can absorb flavors a lot easier than chicken or beef.

This is a really flavorful yet simple dish. My boyfriend loves it so much that I’ve made it 3 times in the last week and he is still asking for it!
I’m very excited to be using my new dishes. They were a very thoughtful Christmas gift. I think they look great. Thank you Amy.
Chinese Five Spice Shrimp Stir Fry with Snow Peas
Adapted from Salt-and-Pepper Shrimp with Snow Peas from Everyday Food
1 pound Shrimp, peeled and deveined
Salt and Pepper
1 Tablespoon Chinese Five-Spice Powder
2 Tablespoons Extra Virgin Olive Oil
2 Tablespoons minced fresh Ginger
1 cup sliced Mushrooms
4 Scallions (white and green parts only) trimmed and cut into 1 inches pieces
7 oz Snow Peas, ends trimmed
In a large bowl, toss shrimp with 1/2 teaspoon, 1 teaspoon pepper and five spice powder.
Heat a large wok over high. Add oil and ginger. Cook until fragrant, about 30 seconds.
Add mushrooms and cook until ginger and oil is evenly distributed, about 1 minute.
Add shrimp, scallions and snow peas and cook until shrimp are opaque throughout, 3 to 5 minutes.
Serve with rice.
Note: When cooking on high heat things move quickly so be prepared. Make sure all your ingredients are prepared in advanced and you give your full attention to the stove.
