Grilled Chicken Sandwich with Spicy Mustard
2 slices Tuscan Bread, lightly toasted
2 small Chicken Thighs, grilled with salt and pepper
2 slices, jalapeno cheese
2 slices tomato
1/2 cup Arugula
1 Avocado, sliced
2 tablespoons Yellow Mustard
2 tablespoons Horseradish
Lightly toast the bread.
Combine the mustard and horseradish.
Spread the mustard combination onto the bread.
Top of one bread slice with avocado, arugula, tomatoes, chicken, cheese and then the other slice of bread.
Sometimes you need a simple meal. Comfort food. Sandwiches are one of those foods for me. It tastes good. It’s good for you and it’s real simple to make.

Tomato Goat Cheese Pizza
1 prepared pizza crust
8 oz Tapenade
6 oz Goat cheese
2 tomatoes, sliced very thin
3 slices very thinly sliced pieces of procuitto
3 tablespoons grated Parmesan cheese
5 Fresh basil leaves, chopped
Extra virgin olive oil for drizzling
Salt & Pepper
Preheat the oven to 400 degrees.
Place the prepared pizza dough on a cookie sheet.
Combine the tapennade and goat cheese together. Spread the mixture over the pizza dough.
Then spread the tomatoes evenly over the pizza dough.
Then sprinkle the pieces of prosciutto evenly over the top. Next sprinkle the parmesan cheese.
Cook in the oven for 15-20 minutes until the crust is golden and crispy and the cheese is melted.
Just before serving scatter over some fresh basil leaves
